Today I was in a hurry to get to work and didn't have anything for lunch. Think, think what can I make that is easy, quick, healthy and tasty!
Here is what I made in about 10 minutes! I got this --I can get it done!
Mix together ---one cup of cooked black beans, one cup cooked of brown rice, one cup of fresh or frozen corn, one half of avocado chopped, and one cup or more of your favorite flavor of A Bit of a Bite Salsa!
Mix all together and get going-
It even had the thumbs up at work! Joyfully delicious lunch today.
