Green Bay Packers Lucky Layered Dip

My sister who lives in Wisconsin was tellng me about her husband that when there is a Packer game she has to make this appetizer.  He said that every time she makes it the Green Bay Packers win!  He has decided that this particular snack is somehow a “Lucky Charm” for the Packers!  So lucky charm or not this is an incredible delicious layered dip! The ingredients just sing out to you and say dig in — it’s game time!

 

Ingredients

1 can of re-fried beans

1 avocado mashed with your spices (or 8 oz. guacamole)

1 8 oz. sour cream or plain greek yogurt mixed with taco seasoning

Pour 3/4 jar of A Bit of a Bite Salsa (your favorite flavor)

Sprinkle grated cheddar cheese (or your favorite cheese) over top

Sprinkle chopped black olives and red peppers (optional) on top

 

Then what do I do?

Avocado and A Bit of a Bite Salsa for Dinner!

Avocado Salsa 300x225 Avocado and A Bit of a Bite Salsa for Dinner!Today was a busy day – we all have them. No time to cook and I want something quick and healthy for dinner.  Grab an avocado and some A Bit of a Bite Salsa pop out the seed, scoop in the salsa, get a spoon and have at it.  A delight to my palette!

Avocado is good for your heart, has vitamin B6 and folic acid, helps lower your cholesterol, promotes eye health, regulates blood sugar levels – on and on!  When you add my salsa that is all natural, GMO free delicious Ohio tomatoes, zucchini and organic spices – just how can you go wrong!

Chicken Tacos with a BITE!

Ingredients

Free Range Chicken Tenderloin cut in cubes
Garlic and herb spices
soft shell tacos
 
Toppings:
Grated cheese
Red Beans with rice
Lettuce
A Bit of a Bite Salsa – your favorite flavor
 

How do I make it?

Saute the chicken chunks with the garlic and spice. Warm the soft taco shell, add your toppings and finish it off with A Bit of a Bite Salsa! That’s the bite I’m talking about.  icon smile Chicken Tacos with a BITE!

Scooter Burger!

My son called me from his work tonight and said “Mom guess what happened?”  to which I replied – what?  “Remember I brought a jar of salsa to my friend’s Dad?  He stopped into work tonight and said how much he liked your salsa and he even gave me a recipe on how he used it!”  So my friends here is the recipe from Scott and he named it the Scooter Burger!

Ingredients
1 pound of ground round
1/4 cup of A Bit of a Bite Salsa -Melissa Medium
Salt and pepper to your liking

 

How do I make it?

Mix it all together in a bowl, mold it into patties and grill away!

Peg’s Mexican Crock Pot Meal

Ingredients

3-4 cups Cooked Chicken or Turkey
1 Onion chopped
1 can Green Chilies
Cumin (to your liking)
Cayenne pepper ( as much as needed to please your taste buds)
1-2 cups of A Bit of a Bite Salsa- any flavor
1 cup Chicken Broth
1 can Black Beans

How do I Make it?

Put all the ingredients in a crock pot except the black beans, cook on high for about one hour.  Add the black beans and cook on low for an additional 4 hours. 

Then what do I do?

Serve in a bowl with grated cheese, dollop of sour cream and crushed corn chips.

MMMM one of the easiest meals and the kids love it!

Easy Salsa Meatloaf

 I was making meatloaf for the family one day and thought– hmm I wonder what it would taste like with my salsa.  So I made it, they ate it, they liked it!  Hope you will too.  icon smile Easy Salsa Meatloaf

 Ingredients

1 ½ # ground turkey, chicken or beef
1 cup of A Bit of a Bite Salsa – any flavor
1 egg
½ cup bread crumbs mixed with ¼ cup oats
Salt and pepper to taste
 

How do I make it?

Combine the ground turkey, bread crumbs, eggs, salt, and pepper
and salsa in a large bowl. Mix well and shape into your loaf pan.
Optional – may puree ¼ cup of A Bit of a Bite Salsa with ¼ cup of tomato paste and spread on top before putting in the oven.
 
 Then what do I do?
 
Cook uncovered 350 degrees for about an hour. Let stand before serving. Serve with a green salad and dinner is ready!

Free Range Egg and Chevre’

So I was at A Greener You sampling out my salsa at the Farmers Market in Dayton, Ohio this past Saturday and met up with some of my salsa fan’s.  While talking to one particular Fan he told me he puts A Bit of a Bite Salsa on his eggs!  ME too!  So I told him about my egg and Chevre’ (goat Cheese) recipe and realized I need to share this with all of you!  It is so easy and delicious. If you are not a goat cheese fan then any soft white cheese will do. icon smile Free Range Egg and Chevre

 

Ingredients

1 Free Range Egg

1 Heaping Tablespoon of your favorite A Bit of a Bite Salsa

Chevre’ or any soft white cheese

1 slice of Ezekel bread (any bread will do I just really like Ezekel)

How do you make it

Saute’, scramble, poach or fry egg in a pan. Put bread in your toaster.  NOW put it all together!

First layer – the toast, then the Chevre’, then the salsa, then the hot egg on top, it melts the cheese and warms the salsa.

Then what do you do

Introduce your palette to a new sensation!   Enjoy!

Thanks Brinkman’s Turkey Farms!

Ingredients

1 can Brinkman’s Chicken (drained)

1 cup Shredded Mexican Cheese

1/2 jar (8oz) A Bit of a Bite Salsa

1 8oz pkg. Cream Cheese

How do I make it?

Add all ingredients into crock-pot and stir.  Heat until all cheeses are melted.

Then what do I do?

Serve with your favorite dipping chip.  Enjoy!

Make it, Bake it, Eat it!

So I emailed my produce man and asked him if he liked my Sarah Sweet salsa.  This is what he said and gave me a recipe to boot!

“The salsa was amazing!  We prefer spicy so we will have to try your hot stuff but the sweet had a great taste.”

Ingredients
Skinless boneless chicken
A Bit of a Bite Salsa – your favorite flavor
Rice – any kind
Cheese – any flavor
cilantro – fresh of course
sour cream
 
How do you make it
Put chicken in a casserole dish and cover it with A Bit of a Bite Salsa bake it at 350 degrees till done.  Put it over cooked rice top with cheese, cilantro and sour cream. 
 
Then what do you do
Have a wonderful meal with your family!

Easy Homemade Re-fried Beans :)

I got home from shopping the other day and waiting in my email was this recipe from my daughter Molly.  She is an amazing cook, just ask her husband Jason who has — well let’s just say –expanded his palette since marrying Molly!

Ingredients
1 can black beans
A Bit of a Bite Salsa ( I use Sarah Sweet)
finely diced onions (optional)
finely diced black olives (optional)
garlic powder (optional)

How do you make it

Loosely drain the black beans. Pour them into a bowl, and with a potato masher, mash the beans until they are somewhat a paste. Add A Bit of a Bite Salsa until the desired consistency. Mix salsa, beans, and add in your onions, olives, and additional spices, if you prefer.

Then what do you do

Enjoy!

(I like to eat this with Kashi Zesty Salsa Pita Chips as a lunch-yum!)
