Enchilada Meal

A family favorite!

Ingredients:

1 T extra virgin olive oil
1 onion chopped
16 oz. organic refried beans
½ cup A Bit of a Bite Salsa—any flavor
cilantro chopped—as much as you like
½ T oregano (dried or fresh)
1 minced garlic clove
1 small can of green chilies or 4 oz. fresh
1 small can of sliced black olives (optional)

 

How do I make it?

Put oil in pan, sauté onion till translucent. Stir in beans, A Bit of a Bite Salsa, cilantro, oregano, garlic and chilies.

Layer tortillas in a casserole dish. Pour bean mixture and then top with more tortillas. Pour the cheese sauce over everything.

 

Cheese sauce

1 ¼ cup of milk (I use soy, rice or goat), 2 T flour 1 ½ cup soft cheese (Monterey Jack or Goat).

Slowly heat milk in a pan, gradually add flour. Mix until beginning to thicken. Add cheese and stir until creamy.  Pour over bean dish, sprinkle with grated cheese and black olives.

 

Then what do I do?

Cook uncovered at 400 degrees for about 18-20 minutes.  Let it sit for a bit before you enjoy!
